Lotus Biscoff Icebox Cake

And here it is…

Lotus Biscoff Icebox Cake
An icebox cake is an old fashioned dessert that is made by layering cookies with a whipped cream mixture. Requires overnight refrigeration, the result? Cookies that have softened into thin cake-like layers.

Lotus Biscoff Icebox Cake

250g cream cheese
1 cup whipping cream
200g lotus biscoff spread
1/2 cup castor sugar
1 tsp vanilla essence

2 packets of 250g Lotus Biscuits

Using a paddle attachment, mix cream cheese, castor sugar, vanilla essence and lotus spread. Mix until smooth.
Whip the cream to soft peaks and fold lightly into the lotus mixture.
Line a large loaf tin with cling wrap, spread 100g of lotus filling into the base of the tin then divide the remaining Lotus filling in 3 parts. Layer lotus biscuits over the cream, trimming them to fit snugly and cover the base of the tin. Spread 1 part of cream over the biscuits, repeat layering until you have used all the cream and end with a layer biscuits.
Cover with cling wrap, and refrigerate overnight.
Unmould onto a serving platter, decorate with the remaining Lotus spread (heated in the microwave) and crushed biscuits.
