Mango Kulfi

Sweet dreams are made of these, a good Mango Kulfi is just sweet enough to hit the sugar cravings and since it’s made of fruit… I guess that makes it healthy 🤔?

Mangoes aren’t in full season here in SA, however you can still find them in the cut fresh fruit section, if you can’t find fresh mangoes, use the tinned mangoes.  Drain them before using.

Perfect way to serve these on an ice floral bowl.

Mango Kulfi

4 cups full cream milk

2 generous pinches of saffron 

1 Tblsp milk powder

2 Tblsp maïzena(cornflour) mixed with 3 Tblsp milk

1/4 cup chopped pistachios 

1/2 tsp ground cardamom

1/4 cup cream

1/2 – 2/3 cup sugar (depends on sweetness of mangoes)

1 1/2 cup mango purée 

 

In a large saucepan, bring milk and saffron to simmer on medium heat, stir occasionally for 20 min, or until the milk has reduced by half.

Remove from heat, stir in milk powder, maïzena/ water, pistachios, cream, cardamom and sugar. Return to the stove and bring to a simmer, stirring for 7 min, the mixture will thicken and reduce once again. 

Remove from the heat, transfer into a bowl and cover the surface with plastic wrap. Allow the mixture to cool for 2 hours at room temp, then mix in the puréed mango.

Set in desired mould and freeze overnight. 

Serve with a sprinkle of ground pistachios and a few saffron strands.
