Pistachio Chocolate Cake

Don’t bite off more than you can chew. Unless it’s chocolate- Godiva

8 layers of chocolate & pistachio goodness , I‘ve added strawberries, does that make this cake healthy? 

Pistachio Chocolate Cake

Chocolate Cake

125g 55% dark choc (melted)
125ml warm water
125g butter (softened)
1 cup castor sugar
2 eggs
1 tsp vanilla essence
1/2 cup sour cream
2 cup cake flour
1 tsp baking powder
2 Tblsp cocoa powder

Mix chocolate & water together, set aside.
Cream butter, castor sugar & vanilla essence. Add eggs and chocolate mixture and mix. Next add the cake flour, baking powder & cocoa powder, mix. Add the sour cream. Divide between 8, 20cm round cake tins, bake for 10min. Allow to cool completely before using.

 

Pistachio Cream


550g whipping cream
115g – 140g castor sugar (adjust your your preference)
1 tsp vanilla essence
95g pistachio paste
A few drops of green food color

80g milk choc (chopped)
150g chopped strawberries

Whip cream, castor sugar, vanilla essence, pistachio paste & green food colour, whip to soft peaks. Weigh out 200g of cream, refrigerate this until required. To the remaining cream, fold the chopped chocolate and chopped strawberries. Divide the cream into 8 parts. Layer the sponges and pistachio cream. Refrigerate for 1 hour. Cover the cake with the reserved 200g pistachio cream, decorate with strawberries.
