Dulce de Leche

 

Authentic Dulce de Leche is a combination of milk, sugar, bicarbonate of soda and it’s flavored with cinnamon and vanilla.

This sweet treat is popular in South America and can be used in various ways. I’ve posted the easy version in the past, where condense milk is boiled in the tin for 3hrs.  After making this Dulce de Leche , I don’t think I’ll ever go back 😋.

Make a batch and store it in your fridge and use it in a variety of sweet treats. Check out the Dulce de Leche and banana icebox cake I posted on my Instagram feed.

Dulce de Leche

4 cups milk

1 1/4 cup sugar

1 cinnamon quill

1/4 tsp bicarb of soda

1 tsp vanilla essence 

In a medium pot, stir together milk,  sugar, and bicarb. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until caramelized and thickened, about 1 3/4 hours. (After about an hour, stir more often as milk caramelizes, to avoid burning.) Stir in 1 teaspoon vanilla. Discard the cinnamon and Transfer to a jar to cool.
