Very Berry Sponge Cake

Ingredients
225 g flour
115 g butter
220 g sugar
200g cottage cheese
3 eggs
1tsp baking powder
Zest of 2 lemons
1 tsp vanilla
Whip sugar, zest and butter until pale and creamy, add cottage cheese then add vanilla. Beat in eggs one at a time, add sifted flour and baking powder, mix well. Pour the batter into a greased loaf tin dusted with flour.
Bake at 170 ° C for 50-60 min

Topping
375ml sour cream
1 1/2 Tblsp castor sugar
Juice of 1 lemon
Mix together and spread over the cooked cake.
Decorate with berries and dust with icing sugar.
